Course Goal / Objective

The aim of this course is to provide students of Gastronomy and Culinary Arts with occupational health and safety awareness; to introduce physical, chemical, biological, ergonomic, and psychosocial hazards encountered in kitchens, laboratories, and foodservice establishments; and to develop safe working habits by promoting awareness of accident prevention, emergency management, hygiene, sanitation, and food safety.

Course Content

Fundamental concepts of occupational health and safety; occupational health and safety legislation; hazards in kitchens and foodservice establishments; risk assessment; occupational accidents and diseases; personal protective equipment; hygiene and sanitation; fire safety; emergency management; electrical and equipment safety; ergonomics; safe use of knives and kitchen equipment; food safety; environmental hazards; first aid awareness; and safety culture.
